Tarragon is a key ingredient in French cuisine. You will find it in vinaigrettes and rich sauces like Béarnaise. It’s also used to flavour oils and vinegars. Tarragon has a powerful flavour so you can use it sparingly.

For best results, add dried tarragon near the end of cooking. This is the best way to showcase its sweet aniseed flavour. Try adding a pinch to a cream sauce with white wine and shallots. Or, mix it with breadcrumbs to make a crunchy coating for baked fish.

Dried tarragon adds a herbal note to vegetarian dishes. We like to sprinkle it over roasted vegetables and savoury tarts.
